General Manager
Originally from Lima, Peru, Francisco Esterripa brings 20 years of experience in the restaurant industry to his role as General Manager at Coastal Del Mar Seafood Grill. Starting his career at Red Lobster, Francisco gained extensive experience in both the Front of House (FOH) and Heart of House (HOH), progressing through roles such as Kitchen Manager, Service Manager, B&H Manager, and General Manager. He has been with FMK Hospitality Group for 7 months and has worked at both Harvest and Coastal Del Mar, originally joining as a Front of House Manager.
What Francisco enjoys most about his role as GM in The Villages is the ability to connect with the community and make a positive impact. He takes pride in building strong relationships with guests and team members alike, fostering a supportive environment that benefits everyone involved.
Outside of work, Francisco has a passion for history and enjoys planning trips to places rich in historical significance, where he can explore and deepen his knowledge of the past.
Joseph Makaiwi
Culinary Manager
Joseph Makaiwi, originally from Fort Myers, Florida, brings over two decades of experience in the hospitality industry to FMK Hospitality Group. With 15 years of management under his belt, Joseph has held roles ranging from production and service management to his current position as a culinary manager. His journey with FMK began five years ago when he joined as a line cook at Belle Glade Country Club. His talent and drive quickly earned him promotions—first to Assistant Kitchen Manager, then to Kitchen Manager within just six months. Since then, Joseph has brought his leadership and culinary passion to five FMK locations, including Evans Prairie, Chop House, Bluefin, and now Coastal Del Mar.

Joseph is known for his ambition, loyalty, and dedication to excellence—qualities that shine in every kitchen he leads. He appreciates FMK’s structured, family-oriented culture, which aligns with his own values. At Coastal Del Mar, his favorite dish is the Chicken Kiev, while guests often rave about the Coastal Platter and Salmon Wellington. A proud Hawaiian and devoted father of three, Joseph takes immense pride in both his work and his family. A graduate with honors and a former member of the National Honor Society, he brings not only skill, but also integrity and heart to the FMK team.
